Rice with Grey Bream

Ingredients:
Serves 4

  • 1 kg of grey bream ;
  • 400 grs of rice ;
  • 1 dl of olive oil ;
  • 150 grs of onions ;
  • 2 cloves of garlic ;
  • 1 bay leaf ;
  • 150 grs of fresh tomatoes ;
  • 1 dl of dry white wine ;
  • 1 bunch of parsley ;
  • salt to taste ;
  • pepper to taste

Preparation:

Prepare the grey bream and cut it into small slices. Bleed it in cold water.
Peel the garlic and onions and mince them. Take the stems off the tomatoes. Remove the skin and seeds and dice them.
Place a pan on the flame. Pour in the olive oil and warm it up. Add the garlic, onions and bay leaf. Fry until brown.
Add the tomato and stir with a wooden spoon. Then add the with wine. Place the fish and the water into the pan and cook. Season with salt and pepper.
With the help of a skimming ladle, take out the fish after it is cooked.
Add the rice to the liquid in which the fish was cooked, and cook it for about 15 minutes.
Place the rice in a suitable vessel with the fish at the center. Sprinkle with chopped parsley.

Hint: Use large fish.
